I actually did this for my chem project last year. It’s a solution called sodium acetate (you can make it using vinegar, water and baking soda). You boil it to evaporate enough water until there’s more of the baking soda than water, otherwise known as the solution being supersaturated (like when you put too much lemonade mix in a cup of water and the mix gathers at the bottom and won’t dissolve. In this case we did it backwards and tricked it). So now, any touch to the solution after being chilled in the fridge disrupts the order of the sodium acetate and causes it to condense in seconds and solidify. This is why sodium acetate is commonly called hot ice
